Apple-Cinnamon Wontons a la Mode

2 serving(s) butter-flavour cooking spray, divided 2 medium apple(s), McIntosh, peeled, cored and minced 1 Tbsp packed light brown sugar 1 tsp fresh lemon juice 1/2 tsp ground cinnamon 24 item(s) wonton wrapper(s), half of a 12 oz package 1 1/2 Tbsp powdered sugar 3 cup(s) light vanilla ice cream Preheat oven to 350ºF. Coat a large baking sheet with cooking spray. In a medium bowl, combine apples, brown sugar, lemon juice and cinnamon; toss to coat apples. Place wonton wrappers on a flat surface. Drop apple mixture by teaspoonfuls onto center of each wrapper. Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal. Transfer filled wrappers to prepared baking sheet and coat surfaces with cooking spray. Bake until wontons are golden brown, about 15 minutes. Place wontons on individual plates and sift powdered sugar on top. Serve with ice cream on the side. Yields 4 wontons, 1

8 Weeks

Julian is 8 weeks old today. He's been smiling, cooing, sucking on his entire fist, an even giving us an occasional giggle. He is so very sweet and I am enjoying every second as his mama. XO, Meg

I've Been Asked A Lot...

I've had a few people asking me about how well Julian (babies) can see and at what age he can see farther distances and various colors. It's been years since I've taken a child development class (probably not since my early college days 10 years ago!) so I looked it up and will share some of that info with you here. You can read the whole post here : How it develops At first your baby can't focus farther than 8 to 15 inches away — just far enough to make out the face of the person holding him. He can detect light, shapes, and movement beyond that, but it's all pretty blurry right now. Appropriately enough, your face is the most fascinating thing to your baby at this age (followed by high-contrast patterns such as a checkerboard), so be sure to give him plenty of up-close time. 1 month At birth your baby didn't know how to use his eyes in tandem, so they may have wandered randomly or even crossed now and then. Family

(Julian with his cousins: Elliot, Lucy, Amelia, Julian with my mom, Naomi, Jonathan) We've been spending lots of time with family. My whole entire (mom's side) of the family is in town (except a few cousins) - many from the east coast who've never even met Dustin - and we've been soaking in as much time with them as possible. My grandma turned 70 on Saturday (my mom also shares her birthday!) so everyone flew in to be with her for her birthday. Julian has been soaking in his time with his cousins and loving it. It's been so great to all be together for the first time in I don't even know HOW long. After everyone leaves next week we'll be ready for some quiet time and getting back to our own routine!
