Lemon Zucchini Bread

I found this recipe online (thank you Pinterest) and as soon as I pinned it, I knew I had to try it. I baked a loaf early this morning to take to a play date and it was delicious. It was such a huge hit that I thought I'd share it with you here. XO, Meg LEMON-ZUCCHINI LOAF WITH LEMON GLAZE (makes one 9×5″ loaf) 2 cups unbleached all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 2 eggs 1/2 cup canola oil 2/3 cup sugar 1/2 cup buttermilk Juice of 1 lemon (or 2 Tablespoons lemon juice) Zest of 1 lemon 1 cup grated zucchini Preheat oven to 35o degrees. Grease and flour a 9×5″ loaf pan; set aside. In large bowl, blend flour, baking powder, and salt; set aside. In medium bowl, beat 2 eggs well, then add canola oil and sugar, and blend well. Then add the buttermilk, lemon juice, and lemon zest and blend everything well. Fold in zucchini and stir until evenly distributed in mixture. Spicy Kale Soup

A while back, my friend Anisa posted this soup on her blog and it has become a family favorite for us so I thought I would pass it along. It is the perfect soup for a crisp autumn evening and has a nice amount of spice and great flavor. I have made a couple of modifications to it that we really like: I use only 1 jalapeno (2 if they are smallish in size), and we also add some turkey sausage to the soup when we want a meal with meat. Sometimes we make it without. Depends on the day. I also usually add a little extra balsamic vinegar. It's quick and delicious. New Recipe: Chocolate Chip Cookies

My family makes famous chocolate chip cookies (I'm not sure who considers them famous, but we've always called them our famous family recipe cookies). We grew up on the exact same recipe my whole life. So here's fair warning to my beloved family: this is not that recipe. I know, you might think I'm a trader. But hear me out. These are in a whole different category - no oats, no nuts. Just chocolate chip cookies at their purest. And trust me, they are amazing (thus my reason for sharing the recipe with you here). I found the original recipe here and made a slight adjustment, but believe me, they are simple to make and amazingly delicious to eat - cakey and moist and soft, mmm. My change from the original recipe below in parenthesis. I believe the magic happens in the melted and cooled butter. It's not creamed in the beginning, just combined. Apple-Cinnamon Wontons a la Mode

2 serving(s) butter-flavour cooking spray, divided 2 medium apple(s), McIntosh, peeled, cored and minced 1 Tbsp packed light brown sugar 1 tsp fresh lemon juice 1/2 tsp ground cinnamon 24 item(s) wonton wrapper(s), half of a 12 oz package 1 1/2 Tbsp powdered sugar 3 cup(s) light vanilla ice cream Preheat oven to 350ºF. Coat a large baking sheet with cooking spray. In a medium bowl, combine apples, brown sugar, lemon juice and cinnamon; toss to coat apples. Place wonton wrappers on a flat surface. Drop apple mixture by teaspoonfuls onto center of each wrapper. Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal. Transfer filled wrappers to prepared baking sheet and coat surfaces with cooking spray. Bake until wontons are golden brown, about 15 minutes. World's Best Banana Bread

In our household we have a very favorite Banana Bread recipe. I am not always a huge fan of banana bread, but this recipe is a sure win each and every time. I've made it with regular all purpose flour, spelt flour, and multiple versions of gluten free flours. I've never had it turn out less than amazing. So since today was cloudy and a little gloomy, I decided to make some with the browning bananas on the counter. It is so delicious, I have to share it with you. Banana Bread (from How To Cook Everything by Mark Bittman) Makes 1 loaf 8 Tbsp butter 1 1/2 C all-purpose flour 1/2 C whole wheat flour Note: (I've replaced this with 2 C Spelt flour OR 2 C gluten free flour mix: today I used Bob's Red Mill All Purpose Baking Flour and it is incredibly soft and moist with no trace of GF grainy texture . Valentine

We are pretty low key Valentine's Day participants. Not because we like to be all bah-humbug about it like many choose to be, but because we like to - and choose to - keep it simple. I choose to not make it a rant about commercialism or pressures on the men around the world blah blah blah... But I do like a good day to enjoy and celebrate love. I made Dustin a batch of our famous family heart shaped cookies that we grew up with, bought him a card, and a bag of M&Ms. We enjoyed a simple meal at home, and a (mostly) relaxing night. I love love and I like to acknowledge how lucky we are to have and love each other. What better way to do that than with the pink and red colors flying and a touch of handmade goodness. Lemon Shortbread

I found this recipe earlier this week for shortbread and it looked so delicious, I had to try it. I made some Saturday night and it is ever bit as delicious as it looks. I, of course, made it gluten free with a minor adjustment based on another person's review of it and have included in bold the correct gf adjustments.
